While we were in NH, Nanny Sharon made us her amazing Waldorf Salad. I don’t know if it’s a Sharon original, but it was fantastic. Here is how she did it:
2-3 chicken breasts (minced/pulled/torn)
1-3 large apples (sliced/minced)
3/4 cups of chopped walnuts and raisins (each)
1/2 cup chopped grapes
1 tablespoon of Splenda
slice a lemon and squeeze the juice into the salad
Mix all of the ingredients in a bowl, and add mayonnaise to taste.
I am not a huge mayo fan, but this salad was a total yum. We ate it out of a bowl as our lunch instead of a side. You could also put it on bread for a sandwich. Very versatile, light for summer eating, and mostly healthy if you keep the mayo use within reason.
