My mom makes this every time I go home, and it’s one of my favorites. I recently began making it in my own home. My girl loves it (2.5 yrs old), and so does the hubby. It works as a lunch or dinner just as well as for a breakfast. It’s a great brunch. (Sorry that the picture isn’t so fantastic. For some reason, it just didn’t work out this time. Egg and Pepper – Serves 3-4

What You Need:

-Extra Virgin Olive Oil (EVOO)
-One Onion (minced/sliced)
-One Bell Pepper (You pick the color.) (minced/sliced)
-8 Eggs
-1/4 cup Milk
-1/3 cup Grated Parmesan Cheese
-1/3 cup Italian Bread Crumbs
-A Larger Frying/Omelet Pan
-Your Favorite Mixing Bowl

What To Do:

Step 1: On medium heat, combine a couple of teaspoons of EVOO and your sliced peppers/onions. Warm until the veggies get soft.

Step 2: In your mixing bowl, combine the eggs, milk, cheese, and bread crumbs.

Step 3: Pour your mixing bowl contents over the peppers/onions and prepare as you would scrambled eggs. (Elevate the heat and then push them around until they look like scrambled eggs.)

Optional Step 4: If you want to add a meat component, you can add precooked ham, sausage, or bacon to the mixture at this point and warm it all up together.

Add pepper to season to taste. Salt is in the bread crumbs, so be frugal if you decide to add this to your meal.
