I had a salad like this one in a restaurant one time, and they called it Caprese. I am not sure if that’s even spelled right. It was delicious, so I went home and tried to copy. It is simple! All you need are basil leaves, tomatoes (I use Beefsteak style tomatoes, but you can probably use any.), and mozzerella cheese! Slice, layer, and serve! I know some people season theirs with extra virgin olive oil, salt, pepper, and/or vinaigrette dressings, but I like mine with just the basics. Girl likes it too. We have this for lunch at least once a week. Anyone else have a twist on this recipe that they’d like to share?
